Breadcrumbed fish fillets with thyme and grana padano dop

Ingredients
  • Fish fillets4 (about 100g each )
  • Grated grana padano (over 16 months)60 g
  • Melted clarified butter100 g
  • Breadcrumbs100 g
  • Thyme twigs4

Clean and chop the thyme.
Mix the bread, thyme and Grana Padano cheese.
Pass the fillets in the melted butter then in the breadcrumb mixture.
Fry the fillets in the remaining hot butter until they are golden on both sides.
Dry them slightly on kitchen paper and sprinkle with salt.
Serve with steamed seasonal vegetables or a salad.
